While we should be eating protein with every meal that doesn’t mean it has to be animal protein at every meal. Both spinach and quinoa are packed with protein not to mention fibre and dozens of other vitamins and minerals. There is a reason that the Incans called it the Plant of Life. Quinoa is one of the most nutrient dense (and protein rich) foods on the planet. While often classified as a grain, quinoa is in fact a seed.
Handful of organic spinach
Cooked quinoa (don’t forget to rinse before cooking!)
Diced red and orange peppers
Sea Salt to taste
Drizzle olive oil and apple cider vinegar for salad dressing.
