Ingredients:
- 1 carrot, peeled and finely grated
- 1 medium onion
- 2 garlic cloves
- 2 cups cooked brown lentils
- ½ cup cooked chickpeas
- 2 large eggs
- ½ cup oat flour
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon hot sauce
- ½ teaspoon fine-grain sea salt
- ¼ teaspoon freshly ground black pepper
- Oat flour for dusting
- High quality extra-virgin olive oil, for the pan
Cooking Instructions:
1. Mash the lentils and chickpeas.
2. Add the eggs and mix.
3. Slowly combine the remaining ingredients in a bowl and mix until it has the consistency of chunky hummus. You should be able to make a pattie out of the mixture. If it is too wet, add some more oat flour, lentils or chickpeas.
4. Create 6 patties out of the mixture and dust with oat flour.
5. Heat oil or butter in a large frying pan on medium heat. Cook the burgers in batches until they are crispy on the bottom for approximately 5 minutes. When you are sure the mixture will hold together flip the burgers and continue cooking for 5 more minutes.
