Bacon Bit Beef Chili

I made this beef chili for my husband’s 40th birthday and it was a huge hit. It qualifies as a Paleo meal minus the beer and sugar. Feel free to omit them or substitute.

 

Ingredients:

  • 2 pounds organic ground beef
  • 3 (15 ounce) cans red kidney beans, drained and rinsed
  • 2 (28 ounce) cans diced tomatoes with juice
  • 2 large yellow onion, chopped
  • 4 cups of  white mushrooms, chopped
  • 2 stalks celery, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 cup real organic bacon bits, not simulated
  • 3-4 cubes beef bouillon
  • 1/2 cup beer
  • 1/4 cup chili powder
  • 2 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 2 teaspoons ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon brown sugar/sucanat or honey

 

Cooking Instructions:

1. Cook beef and onions in a large pot over medium heat for ten minutes.
2. Next add beans, mushrooms, celery, peppers, bacon bits, beef bouillon and beer and cook for five minutes.
3. Finally add the rest of the ingredients and cook for thirty minutes on low to medium heat, stirring occasionally.
