2014-04-18 12.41.31This was my husband’s invention and it was surprisingly delicious as well as comforting for a dreary April afternoon.


  • 2 caramelized Onions (chopped)
  • 1 1/2 cups Congo Peas
  • 2-3 carrots peeled and chopped
  • 1/4 cup Maple Syrup
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1tsp. parsley

Cooking Method:

  1.  In a saucepan melt some butter at medium heat, then add onions and cook until caramelized.
  2.  Add 3 cups of water with 2 cups chicken or vegetable broth.
  3. Next add remaining ingredients and cook for 15-20 minutes or until carrots are soft.
