This was my husband’s invention and it was surprisingly delicious as well as comforting for a dreary April afternoon.
Ingredients:
- 2 caramelized Onions (chopped)
- 1 1/2 cups Congo Peas
- 2-3 carrots peeled and chopped
- 1/4 cup Maple Syrup
- 1 tsp. basil
- 1 tsp. oregano
- 1tsp. parsley
Cooking Method:
- In a saucepan melt some butter at medium heat, then add onions and cook until caramelized.
- Add 3 cups of water with 2 cups chicken or vegetable broth.
- Next add remaining ingredients and cook for 15-20 minutes or until carrots are soft.
