These were an experiment that turned out even tastier than I expected. The blueberries flavour (and colour) the entire cup.  The measurements are approximate so feel free to modify to your liking.

Ingredients:

  • 1/3 cup blueberries
  • 2/3 cup sunflower seed butter
  • 1/3 cup coconut oil
  • 1 tsp vanilla
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened, shredded coconut
  • 3 tbsp chia or flax seeds
  • Dash of salt

 

Method:

1. Melt coconut oil and sunflower butter in a small saucepan over medium heat. Add in the remaining ingredients and mix well.
2. Line a baking tray or large tupperware container with paper cups.
3. Once mixture has cooled, pour into paper cups about 2/3 full.
