- 2 cups dried quinoa (4 cups water– and don’t forget to rinse the quinoa before boiling)
- 1 1/2 cups chopped parsley
- 1 chopped cucumber
- 3 cups chopped red or green grapes
- 3-4 chopped celery stalks
- 2 red peppers – finely chopped
Dressing:
- 1/2 cup olive oil
- 1/4 cup honey
- 1/4 apple cider vinegar
