Ingredients:
- 1 bunch of Kale
- 6-8 boiled beets (grated)
- 4-5 avocados
- 1 1/2 cup chopped parsley
- 1 cup chopped cilantro
- 1/2 cup dried cranberries
- 1/2 cups chopped almonds or other nuts or seeds.
Dressing : Olive oil and Lemon or your preferred dressing.
Note: I do not add the avocado till I am ready to eat. I top the salad with avocado as mixing it in ahead of time can make the salad soggy.
