This is a relatively easy and super tasty meal to combine with rice to form a complete protein. You can add another side of your preferred vegetables such as broccoli or cauliflower or a side of salad.
Ingredients:
- 1 can pumpkin
- 1 can black beans
- 1 chopped onion
- 1/2 tsp thyme
- 1 tsp oregano
- dash of salt
Instructions:
- Add 1 tbsp olive oil or butter to a pan and cook onion over medium heat until caramelized.
- Next add can of pumpkin and cook over medium-low heat.
- Add the black beans
- Add thyme, oregano and salt
