Quinoa, Parsley and Honey Grape Salad

Ingredients:

  • 2 cups dried quinoa (4 cups water– and don’t forget to rinse the quinoa before boiling)
  • 1 1/2 cups chopped parsley
  • 1 chopped cucumber
  • 3 cups chopped red or green grapes
  • 3-4 chopped celery stalks
  • 2 red peppers  – finely chopped


Dressing:

  • 1/2 cup olive oil
  • 1/4 cup honey
  • 1/4 apple cider vinegar
