Kale & Beet Salad with Avocado Lorraine Driscoll, BA, MST, RHN 11 years ago 2014 04 23 06 06 19 e1398729876536 Makes six servings Ingredients: 1 bunch of Kale 6-8 boiled beets (grated) 4-5 avocados 1 1/2 cup chopped parsley 1 cup chopped cilantro 1/2 cup dried cranberries 1/2 cups chopped almonds or other nuts or seeds. Dressing : Olive oil and Lemon or your preferred dressing. Note: I do not add the avocado till I am ready to eat. I top the salad with avocado as mixing it in ahead of time can make the salad soggy.
