Grain Free Red and Green Pepper Nachos

This is similar to my zucchini pizzas except I used mostly red and green peppers (and some leftover zucchini). I simply cut up some peppers, then topped them just as I would with corn chips (salsa, green onions, olives, chili flakes etc.)
