Carrot and Sweet Potato Chicken Soup

Ingredients:

  • 3 boneless, skinless chicken breasts cut into 1 inch cubes
  • 4 carrots, chopped
  • 2 large sweet potatoes, cubed
  • 2 cups chopped broccoli
  • 1 cup mushrooms
  • 1 medium sized onion finely chopped
  • 2 cups chicken broth
  • 4-5 cups water
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/4 tsp thyme
  • 1/4 tsp garlic powder


Cooking Instructions:

1. Cook chicken with onions in 2 tbsp butter on medium-high heat for approximately 5-10 minutes.
2. Then add chicken broth, water, carrots, mushrooms, sweet potatoes, broccoli, basil, thyme, oregano, paprika and garlic powder.
3. Cook on medium to low heat for 15 minutes or until fully cooked.
