This salad has lots of lentil and chickpeas that provides protein and leaves you feeling full longer. I drizzle olive oil with lemon juice or apple cider vinegar, but feel free to add your favorite salad dressing. Cilantro is great for pulling heavy metals out of the body but if you’re not a fan of too much cilantro simply add less.
Ingredients:
- 1 can chickpeas
- 2 cans lentils
- 4 celery stalks (chopped)
- 1 cucumber (chopped)
- 2-3 red, orange and/or green peppers
- 2 cups fresh cilantro (chopped)
- 1 1/2 cups feta cheese
- 3 shallots finely chopped
- Dash of sea salt
