Pumpkin and Black Bean This is a relatively easy and super tasty meal to combine with rice to form a complete protein. You can add another side of your preferred vegetables such as broccoli or cauliflower or a side of salad.


  • 1 can pumpkin
  • 1 can black beans
  • 1 chopped onion
  • 1/2 tsp thyme
  • 1 tsp oregano
  • dash of salt


  • Add 1 TBSP olive oil or butter to a pan and cook onion over medium heat until caramelized.
  • Next add can of pumpkin and cook over medium-low heat.
  • Add the black beans
  • Add thyme, oregano and salt
