Coconut Milk Ice Cream

2014-04-27 14.51.172014-04-27 18.37.22This is a tasty alternative to milk based ice cream or even frozen yogurt for those who cannot tolerate dairy in any form. It has that tasty, satisfaction of ice cream minus the congestion and digestive problems that dairy causes for many people. Be adventurous and modify the recipe to your desired preferences.

Ingredients:

1 can coconut milk

3 cups almond milk

4 tbsp raw sugar

1 tbsp carob/cocoa

1 tsp vanilla

1 tsp peppermint

1/3 cup coconut

5 1/2 tbsp coconut butter

1/4 cup carob chips

1/2 cup nut butter

Instructions:

Mix coconut milk and almond milk in a bowl, then blend in coconut butter, nut butter and sugar. Add remaning ingredients until thoroughly mixed. Place in freezer for 20 minutes, then remove and stir ingredients again. Place bowl back in freezer continuously mixing every 45 minutes to 60 minutes until mixture becomes ‘ice cream’.
