Makes six servings
1 bunch of Kale
6-8 boiled beets (grated)
1 1/2 cup chopped parsley
1 cup chopped cilantro
1/2 cup dried cranberries
1/2 cups chopped almonds or other nuts or seeds.
Dressing : Olive oil and Lemon or your preferred dressing.
Note: I do not add the avocado till I am ready to eat. I top the salad with advocado as mixing it in ahead of time can make the salad soggy.
